Diane Forley, chef and proprietor of New York City's Verbena restaurant, has been praised for dishes that are delicious yet "disarmingly simple." This is one of the true tightrope acts in professional cooking. The Anatomy of a Dish, Forley's debut cookbook, shows how to think about ingredients and demonstrates the various ways to prepare and cook them to their greatest advantage. Forley considers the relatedness of fruits and vegetables, grains, roots, and tubers, and how their botanic lineages play out in recipes and menus. A good deal of this information is spelled out in clear charts with lists of subsequent recipes. These are Forley's keys to simplicity.
There are three basic sections to the book: Building a Dish, Developing a Menu, and Concluding with a Sweet. Building a Dish includes chapters such as "Vegetable Studies," "Salads," "Soups and Stews," "Grains, Beans, and Pasta," "Savory Pastries," and "Breads," the building blocks to the full menus to come when entrée dishes--fish, shellfish, poultry, meat, and game--are added. The roasted beets in "Vegetable Studies" turn up later in Ruby Risotto with Winter Greens and Horseradish Crème Fraîche; the roasted eggplant purée reappears in Eggplant and Garlic Stew with Merguez Sausage.

The book contains numerous suggestions on how leaders can manage their own attention and that of their employees more effectively (and how to avoid and treat "info-stress"), but always with an eye on the ultimate goal: affecting the type and amount of attention your customers give you. Already, more money is usually spent on attracting attention to a product than is spent on the product itself. And as our information environment gets increasingly saturated, holding a person's attention becomes an ever more difficult proposition; as the authors suggest, actually paying for someone to receive your information is a realistic prospect in the not-too-distant future. Indeed, the book's final chapter is devoted to what the authors predict will affect attention in the future, and how attention can and will be acquired, monitored and distributed.
The Attention Economy is peppered with anecdotal pull-outs and "overheard" comments--and though intriguing in a random-factoid and zippy-little-quote way, this sideline information doesn't always tie in well with the authors' points and often seems distracting. The book is well written, though, and the authors, both of whom work at the Accenture Institute for Strategic Change, take an informed and well-balanced look at what is perhaps our society's most priceless, ephemeral commodity. --S Ketchum [via]

A lush, cautionary tale of a life of vileness and deception or a loving portrait of the aesthetic impulse run rampant? Why not both? After Basil Hallward paints a beautiful, young man's portrait, his subject's frivolous wish that the picture change and he remain the same comes true. Dorian Gray's picture grows aged and corrupt while he continues to appear fresh and innocent. After he kills a young woman, "as surely as if I had cut her little throat with a knife," Dorian Gray is surprised to find no difference in his vision or surroundings. "The roses are not less lovely for all that. The birds sing just as happily in my garden."
As Hallward tries to make sense of his creation, his epigram-happy friend Lord Henry Wotton encourages Dorian in his sensual quest with any number of Wildean paradoxes, including the delightful "When we are happy we are always good, but when we are good we are not always happy." But despite its many languorous pleasures, The Picture of Dorian Gray is an imperfect work. Compared to the two (voyeuristic) older men, Dorian is a bore, and his search for ever new sensations far less fun than the novel's drawing-room discussions. Even more oddly, the moral message of the novel contradicts many of Wilde's supposed aims, not least "no artist has ethical sympathies. An ethical sympathy in an artist is an unpardonable mannerism of style." Nonetheless, the glamour boy gets his just deserts. And Wilde, defending Dorian Gray, had it both ways: "All excess, as well as all renunciation, brings its own punishment." [via]
