But the very qualities that were repellent in the man make for fascinating reading in Francine du Plessix Gray's biography, At Home with the Marquis de Sade. The pitfalls of writing about such a scandalous subject are obvious: Sade is so completely associated in the modern mind with extremely degrading sexual escapades that any book about him risks being tarred with the same prurient brush--how does one discuss the Marquis without mentioning such loaded topics as whipping, sodomy, masturbation, blasphemy, or orgies, for example? The answer is, one doesn't; but Gray's focus in this biography is less on Sade's sexuality than on his relationship with the two most influential women in his life: his wife, Pélagie, and his mother-in-law, Madame de Montreuil.
It seems even a sadist can love, and in his own way, the Marquis de Sade loved his wife. Even more remarkable is that Pélagie apparently returned his affection devotedly for many years, despite frequent scandals, jailings, and even an affair with her own sister. Gray draws extensively on letters written by Sade, his wife, and his mother-in-law to paint a vibrant picture of an unorthodox marriage, a period of great political upheaval, and a complicated bond between mother and daughter. Gray also places the Marquis's writing in a context that, while forthrightly characterizing it as "the crudest, most repellent fictional dystopia ever limned, the creation of a borderline psychotic whose scatological fantasies have grown all the more deranged in the solitude and rage of his jail cell," also acknowledges its "recklessness and daring" as well as its influence on later writers from Swinburne and Baudelaire to Octavio Paz and Luis Buñuel. The tales are eminently readable. As Bulfinch wrote, "Without a knowledge of mythology much of the elegant literature of our own language cannot be understood and appreciated. . . . Our book is an attempt to solve this problem, by telling the stories of mythology in such a manner as to make them a source of amusement."
Thomas Bulfinch, in his day job, was a clerk in the Merchant's Bank of Boston, an undemanding position that afforded him ample leisure time in which to pursue his other interests. In addition to serving as secretary of the Boston Society of Natural History, he thoroughly researched the myths and legends and copiously cross-referenced them with literature and art. As such, the myths are an indispensable guide to the cultural values of the nineteenth century; however, it is the vigor of the stories themselves that returns generation after generation to Bulfinch.

In the course of everyday life people constantly choose between what they find aesthetically pleasing and what they consider tacky, merely trendy, or ugly. Bourdieu bases his study on surveys that took into account the multitude of social factors that play a part in a Frenchperson's choice of clothing, furniture, leisure activities, dinner menus for guests, and many other matters of taste. What emerges from his analysis is that social snobbery is everywhere in the bourgeois world. The different aesthetic choices people make are all distinctions-that is, choices made in opposition to those made by other classes. Taste is not pure. Bourdieu finds a world of social meaning in the decision to order bouillabaisse, in our contemporary cult of thinness, in the "California sports" such as jogging and cross-country skiing. The social world, he argues, functions simultaneously as a system of power relations and as a symbolic system in which minute distinctions of taste become the basis for social judgement.
The topic of Bourdieu's book is a fascinating one: the strategies of social pretension are always curiously engaging. But the book is more than fascinating. It is a major contribution to current debates on the theory of culture and a challenge to the major theoretical schools in contemporary sociology.

Roberts divides his book into the traditional courses of a French meal, starting with little things to nibble and encourage an appetite, and ending with dessert. This time, though, she speaks to everyone with little or no experience in the kitchen, which is most people these days. Always in tune with the moment, and ever the gracious realist, Child (although calling her Julia seems reasonable since she treats us with such open informality) explains in The Way to Cook how to boil an egg and stuff it, as well as how to make a perfect omelet and an elegant soufflé.
To help out readers who lack the most basic knowledge, she organizes the book by techniques rather than by ingredients. Soups are first, a relatively unintimidating choice to build confidence through delicious results such as true French Onion Soup and a contemporary Black Bean Gazpacho. Next come breads, updated to use a food processor to cut the kneading time. The fish chapter covers broiling a salmon steak and creating a sophisticated Crown Mousse of Trout. Chapters on poultry, meats, vegetables, and desserts are equally ample and wide-ranging.
When The Way to Cook was published in 1989, it accompanied a television series. A related set of videotapes, the first to teach cooking comprehensively, was offered simultaneously. However, more than 600 color photos in this book make it fully complete on its own.
The Way to Cook is a good reference volume, a useful gift, and a handsome way to follow Julia's career as she transformed from a French classicist to the ever-evolving, always clear and reliable teacher we have come to adore. --Dana Jacobi [via]
