Italy being Italy, food there forms a central part of the culture and of daily life, even in the otherworldly confines of the Vatican. Popes being human beings as well as ambassadors of the divine, the food of the Vatican has ranged, over 2,000 years, from the ascetic to the sumptuous, reflecting the tastes of the officeholder. Where, for instance, John Paul II favors clear soups and the occasional serving of white meat, his Renaissance predecessor Alexander VI was an accomplished and omnivorous glutton--to whose endless appetite, write Parma-based historians Rinaldi and Vicini, the Western world owes the custom of the Christmas Eve feast.
Rinaldi and Vicini offer a vivid, anecdotal, and thoroughly entertaining account of the popes and their varied palates, matching historical observations with recipes fit for a celestial table. For the first pope, Saint Peter, they suggest a wondrous risotto prepared with arborio rice and canteloupe, followed by sole stuffed with crayfish and truffles--a bit elaborate for that simple fisherman, perhaps, but delicious nonetheless. For Paul II, the great humanist and tactician, their menu calls for Venetian rice soup, baked grouse, and Roman-style tripe--not the stuff of an ordinary meal, but a sure hit among the daring. And to commemorate the latest year of Jubilee, Rinaldi and Vicini suggest a nice glass of Brunello di Montalcino, one of Italy's greatest wines, but also a slice of pane della carità, or "bread of charity," made of equal parts of wheat, oat, and barley flour.
Rinaldi and Vicini's book mixes well-tested recipes with fascinating, sometimes bizarre episodes of ecclesiastical history. In every regard, it's a treat. --Gregory McNamee [via]

Daniel Boulud's Manhattan restaurant, Daniel, is considered one of the nation's top dining spots. But in 1999, New York Times restaurant reviewer William Grimes demoted Daniel from its lofty four-star status to a merely "excellent" three stars. Leslie Brenner's The Fourth Star recounts her self-assigned year behind the scenes at Daniel, at the end of which Grimes returned the coveted star. Her fascinating fly-on-the-wall narrative takes readers to the restaurant's two arenas: the front of the house, a world of demanding patrons and equally exacting staff, who try to accommodate guests while ensuring the smooth coordination of operations; and the world behind the swinging doors, a roiling place in which tension is both staved off and cultivated by barking chefs--including Boulud--but which nonetheless (or consequently) produces world-class food.
Brenner takes readers everywhere: to the reservations desk and its crew's VIP-seating machinations; to staff meetings; to a wine-buying session; to a visit from President Clinton (who is allergic, it's noted, to chocolate); and, primarily, to the kitchen, where "the work is really hard and someone else takes all the credit" and burnout means that cooks, most in their 20s, stay an average of a year. This is all great stuff, and Brenner is particularly, almost amazingly, good at getting it all down to the last crème brûlée. Unfortunately, the book is compromised by the author's near-sycophantic regard for Boulud (his "genius is readily apparent," is a typical observation) and the restaurant, whose "wondrousness" is presented as a given. Thus the narrative, which is also (perhaps unavoidably) repetitive, often feels like an infomercial. Hanging her tale on the wish for the fourth star also plays Brenner false, as the issue is largely unmentioned or otherwise expressed by the cast of characters, leading Brenner to interject leading comments ("Could [Boulud] have missed his moment in the eyes of the critic whose judgment matters most?") that only salute the lack of narrative tension. These things said, the book is still a must-read for anyone interested in the workings of a top-drawer restaurant at the peak of its powers, and of the amazing hierarchical dramas, front of the house and back, that make it what it is. --Arthur Boehm [via]

The book avoids these traps through MacNeil's obvious, and infectious, love of her subject, which comes out in almost every sentence of the book, and which lets her talk about wine in a way that combines the good teacher, the trusted friend, and the expert sommelier. As director of the wine program at the Culinary Institute of America in Napa Valley, California, MacNeil is one of the world's true experts on wine. After reading a chapter on the Burgenland, for example, you've learned about the region's sweet wines while feeling like you're actually there, toasting a glass of Cuvee Suss with the author. It is this passion that leads to describing an Italian riservas as "mesmerizing" and a Cabernet Sauvignon as having "texture like cashmere."
The Wine Bible is broken into countries, hitting all of the major wine producers and most of the minor ones. Each section gives detailed descriptions of the country's wines (with chapters on individual regions when necessary), highlighting specific wine producers and individual wines, as well as talking about local foods, customs, and other tidbits that add to the reading experience.
